Thai Peanut Noodles

Great dorm food - 2 minute prep, and ingredients don’t need refrigeration!


1 package ramen

1 large spoonful peanut butter

Sriracha sauce to taste

Optional: chopped peanuts, chopped green onion, ramen flavor packet

Prepare ramen as directed on package, with or without flavor packet as desired. Drain most of the water, then add peanut butter and sriracha. Stir. Top with peanuts and onion if desired.

Lemon Pasta

Pasta is a staple college food, but tomato sauce can get old - why not change it up a bit?


½ cup olive oil

½ cup Parmesan cheese, grated

½ cup lemon juice (about 2 lemons)

salt & ground black pepper to taste

1 package (1 lb) spaghetti (or other pasta)

¼ cup chopped fresh basil

1 tablespoon lemon zest

  1. In a large bowl, mix together olive oil, parmesan cheese, lemon juice and salt and pepper. Set aside.

  2. Cook spaghetti according to package directions. Reserve 1 cup of pasta water and drain the rest from the spaghetti.

  3. Toss spaghetti with the lemon sauce, basil, and lemon zest. Add pasta water a little at a time until it is well moistened.

  4. Season with salt and pepper if desired.
